Zero waste is hot right now in the food world, certainly. But drinking dens are getting in on the action, too.
With novel ways of re-imagining stuff that would normally be made out of single-use plastic (straws) to the way that ingredients are being grown, (grapes for wine) there's lots of fun ways that bars are going green.
Here's some of the best we've seen.
Straws made out of bamboo
Reusable and biodegradable, bamboo straws are the future. The newly opened Nine Lives in Bermondsey uses only these – as well as having a sound system re-purposed from one that used to power a club, a carefully curated drinks menu and general ethos of not wasting.

The Long Arm in Shoreditch pride themselves in taking DIY drinking to the next level, with an urban farm, micro-brewery and distillery onsite.
Founders Ed and Tom Martin have also created a pretty cool sustainable cycle. Leftover grains from brewing are fed to fish, which are then cooked for the restaurant, while the fish waste is used as fertiliser.
Not entire Bloody Marys hiding in the hedgerows, of course, (this isn't a utopia we live in) but foraged ingredients. Seasonal cocktail bar Scout go hunting for whatever is growing to work into cocktails – from lilac to elderflower.

Nine Lives bar have their own composting system at the back of their property, and a herb garden that is used to fill their cocktails with delicious flavour.

Going natural and biodynamic
Hackney's Sager + Wilde and Soho's Antidote are big into gnarly, interesting biodynamic and natural wines and champagnes. The former means that grapes are grown and harvested with no chemicals or pesticides and the wine is finished without sulfur or any other additions, while the latter involves similar organic growing methods, alongside following solar and lunar cycles.
